  • 1 onion
  • 3 courgettes
  • olive oil
  • salt
  • black pepper

Instructions
 

  • Peeling the onion, cutting it into thin slices and cooking it in a pan with a little oil.
  • Meanwhile, washing the courgettes, cutting them into thin slices and adding them to the fried onion with a pinch of salt.
  • Cooking for about 30 minutes then breaking the eggs directly into the pan, with a little black pepper, and mixing gently with a wooden spoon for a few minutes, to blend the eggs well.
  • Finally, serving it hot or cold.
