The island of Majorca, the largest of the Balearic archipelago, in the Mediterranean Sea, has a varied gastronomy based on fish, vegetables, legumes and meat, and among its typical dishes there is only spoiled for choice. In particular, during Easter week people prepare panades (Mallorcan Empanadas)stuffed pies with meat and peas that the whole family likes. They can also be filled with other fish-based ingredients, but the traditional recipe is with lamb and a typical salami of the island.

Ingredients
  

  • 500 gr flour
  • 125 gr pork lard or butter
  • 60 ml olive oil
  • 125 ml water
  • 1 egg yolk
  • 800 gr boneless lamb
  • salami
  • 350 gr peas
  • paprika
  • black pepper
  • salt
  • oil

Instructions
 

  • Cooking the peas in a pan with water for about twenty minutes.
  • In the meantime, seasoning the meat with salt, pepper and olive oil.
  • Adding the salami and mix everything.
  • When the peas are cooked, draining and seasoning with the paprika, setting them aside and preparing the pie.
  • Kneading the flour with the pork lard or the butter, the oil, the water and the egg yolk until you get a soft dough that won’t stick to your hands.
  • At this point using the baking paper and forming discs the size of a CD, on which the individual panades will be placed, and also preparing the pan for the oven.
  • Once you have prepared ten discs, separating a piece of dough about the size of a ball, approximately 50 gr and then another piece smaller than about 20 gr.
  • With your hands, creating the pie as a kind of bowl using the larger ball, with high edges, and placing it on the paper disc.
  • Fill it with a little peas and a little meat up to the upper edges.
  • Then preparing a disk with the smallest ball to cover the pie.
  • With your hands closing the edges of the base with the disc spread on the filling, pinching the pasta to give it the characteristic shape like a braided one.
  • With a fork, pricking the cake so that the steam can escape while it is cooking.
  • Repeating the same operation until the base is finished. Enjoy your meal!
  • Preheating the oven to 180º, putting the panades in the pan with the parchment paper and cooking for about 45 minutes until the pie becomes golden. Enjoy your meal!
