The rural tourism in Castile and Leon has become one of the main magnets that attracts great number of travellers. Hundreds of colorful towns exist that have conserved millenarian and ancestral traditions and customs. There are a lot of special interest ‘fiestas’ in the towns, which have maintained traditions like the Passage of Fire, in San Pedro Manrique (Soria), where one has to pass over ashes with bare feet. The Carnival of the Bull in Ciudad Rodrigo near Salamanca is another example of the thousands of popular fairs that fill the calendar of towns in Castile and Leon throughout the year.
Gastronomy in Castile and Leon has a very abundant popular recipe book in which the main products are roasted weaned lamb, suckling pig and ‘cabrito’. Sausages from Iberian pig of Salamanca, Serrano ham and garlic sausage, with a center of production in Guijuelo, are also very well known, just as the cured meat of Leon. On the other hand, legumes form a fundamental part of the diet and the gastronomical traditions, a good example of this being the beans from Barco de Avila or the lentils from Armuña. High range wines are elaborated along the Duero River, with denominations of origin like Rivera de Duero, Rueda, Cigales or Toro.
