Tortilla potatoes and sausage (potatoes omelette with sausage) is a variation of the traditional spanish potatoes omelette (Tortilla).

Potatoes omelette with sausage

Ingredients
  

  • 1 kg potatoes
  • 60 gr sausage
  • 8 eggs
  • 8 spoonfuls olive oil
  • 1 spoonful salt

Instructions
 

  • Using a pan of 24 cm in diameter.
  • Peeling and washing the potatoes, cutting into small cubes or slices.
  • Putting olive oil into the pan and lighting the fire, when he has reached the ideal temperature adding the potatoes.
  • While the potatoes are cooking, cutting the sausage into pieces and frying it in a pan with oil, when it will be well cooked, removing from pan.
  • When the potatoes are also cooked, removing from the pan and putting them on a plate with paper towels.
  • Beating eggs in a large bowl, adding salt, potatoes and sausage and mixing everything well.
  • Lighting the fire, adding olive oil in the pan and when it will be heated putting the eggs into the pan.
  • Let cook over medium heat.
  • When the bottom will be cooked, turning the omelette with a flat plate or a lid and putting it back into the pan to finish cooking.
  • When even the other half of the omelette will be cooked, removing from heat and serving. Enjoy your meal!
